4 large chicken breasts or 1 large block of extra firm tofu

½ Cup olive oil or garlic oil

4 tablespoons Zatar

½ juice of a lemon

1 teaspoon salt


  1. Cut chicken breast into small bite-sized pieces

  2. Completely cover with Zatar making sure all sides are coated

  3. Heat oil in a large shallow pan on medium-high heat

  4. Add chicken and brown on all sides

  5. Turn chicken down to medium

  6. Continue to cook 3-4 minutes until completely cooked through

  7. Add salt and finish with lemon juice

Note: For Vegan tofu Zatar take extra firm tofu and press between two plates until all the moisture is drained from the tofu. Crumble by hand or in a food processor and completely coat tofu with Zatar and cook on medium-high heat until everything gets nice and toasty. Add lemon and salt at the very end.

Serve chicken or tofu Zatar with yogurt sauce or hummus, on pita or with saffron rice, and a Middle Eastern salad. See recipes for fun sides.
